The word kaiseki (kye-SEH-kee) carries two meanings in Japanese cuisine, both pronounced the same. One refers to a formal, ceremonial progression of dishes rooted in tradition. The other speaks to something more free-spirited: exceptional food meant to be savored alongside sake. Our kaiseki menu is a blend of both traditions. The menu changes monthly, celebrating the finest seasonal ingredients through the artistry and precision of Japanese kaiseki.

Chef Shin brings over 30 years of fine dining experience from Japan to the kaiseki bar at KAISEKI YUZU. Across more than three decades in the industry, he spent over 10 years as a head chef, honing the precision and discipline that define traditional Japanese cuisine.
